Chicken Jambalaya
Ingredients :
1/3c Chopped Celery
1/4c Chopped Onion
1/4c Chopped Green Bell Pepper
2tbsp Margarine
1 14-oz. Can Italian Style Stewed Tomatoes, cut up
1 1/2c Chicken Broth
2/3c Uncle Ben's Rice (uncooked)
1tsp Dried Basil
1/4tsp Garlic Powder
1/4tsp Ground Pepper
Big Dash White Pepper
Hot Sauce ( I use VERY mild, but I use a lot of it - Season To
Taste)
1 Bay Leaf
2c Chicken Breast, cooked and cubed
Instructions :
In a large pot, cook celery, onion and bell pepper in margarine
until vegetables are tender, but not brown.
Stir in undrained tomatoes, chicken broth, uncooked rice, and all
other ingredients, except chicken. Bring to Boiling; Reduce Heat.
Cover and simmer, 18 minutes, until rice is almost done.
Stir in chicken and heat through. Discard bay leaf.
Serves 3-4 depending on how hungry you are!
