Cinnamon Oatmeal Scotchies
Ingredients:
1 1/4 c. all-purpose flour
1 tsp. baking soda
1 tbsp. ground cinnamon (a little more won't hurt)
1/2 tsp. salt
1/2 c. (1 stick) real butter (softened)
1/2 c. butter flavored Crisco shortening (1/2 stick)
3/4 c. packed brown sugar
3/4 c. granulated sugar
2 large eggs
1 tsp. vanilla extract
3 cups Quaker old fasioned oats
1 bag (11oz.) Nestle's Toll House Butterscotch Morsels
Instructions:
-
Heat oven to 350º F
-
In a bowl, combine flour, baking soda, cinnamon and salt. Stir with a fork until cinnamon is mixed in thoroughly.
-
In large electric mixer bowl, cream both sugars, butter and Crisco. Add eggs, one at a time, mixing after each. Add vanilla.
-
Slowly add flour mixture.
-
With a large spoon, thoroughly mix in the oatmeal and butterscotch morsels.
-
Drop large spoonfuls (about 1/4 c.) onto ungreased cookie sheet.
-
Cook for 11 minutes at 350º (cookies will look uncooked in the middle when done)
-
Allow to cool on the cookie sheet for 5 min. before transferring to a paper cooling sheet (I use paper grocery bags). Makes about 24-27 4" cookies
